Happy Monday! Hope you had a fabulous weekend :) Hockey madness has begun here - with two kids playing and a third swimming competitively, we are officially outgunned, lol.
What about that title? Sounds impossible, right? Well, what if you thought of your art as a place to simply add a bold splash of colour, and painted out a huge canvas in a solid shade? Thats exactly what this is - a canvas painted out black, as found on Rue. It becomes part of the composition, grounds the whole wall, and functions as decor. Almost like colour-blocking a wall, but so much less permanent, and really, you could change this with the seasons if you wanted - a deep merlot for winter, a beautiful azure for summer, etc...

Thats about as much time as I have to make art these days! You? Thoughts?

In my family, when we eat lasagna we always skip the ricotta and load up on bechamel sauce. Bechamel is a roux made with flour, milk and lots of butter. The thing about bechamel sauce, you have to constantly stir it for close to 30 minutes to get it right. So after living through 20-something years thinking I only liked lasagna with bechamel sauce, I was completely surprised when I couldnt stop eating my grandmas ricotta- filled lasagna a few years ago. Unfortunately, both my moms and grandmas lasagna recipes take close to an hour just to bake. Whereas this recipe takes less than 30 minutes to make, start to finish...meaning I can make lasagna any night of the week! And for being such a quick dinner, it really has great flavor and can easily be reheated.

Ingredients:
1 (6.8 ounce) All Natural Jones Golden Beef Sausage Links
8 ounces lasagna noodles, broken into thirds
1 tbsp canola oil
1 onion, diced
3 garlic cloves, minced
2 (14.5 oz) cans of Italian diced tomatoes, drained
4 ounces fresh mozzarella cheese, sliced
½ cup ricotta cheese
salt and pepper, to taste
Directions:
Preheat oven to 400°F.
Prepare sausage according to package directions. Cut links into bite-size pieces and set aside. Cook lasagna noodles according to the package and set aside. Heat a large oven safe skillet (I used a cast iron skillet) over medium heat and add oil. Once oil is hot, add onion and cook until softened, about 6 minutes. Add garlic and cook for one more minute. Stir in diced tomatoes, sausage pieces and lasagna noodles until everything is evenly distributed. Top with sliced mozzarella and scoops of ricotta cheese. Bake for 15 minutes or until sauce begins to bubble and cheese has melted.

2 minute chocolate chip cookie
2 minute chocolate chip cookie
Earlier this week, I had a real craving for cookies. It was late at night and I didnt want to bake a whole batch so I decided to try out one of the cookies in a mug recipe. Ive made 5 minute mug cakes in the microwave before and although not as good as a proper baked cake, they are great for when you really, really need cake. Well I really needed a cookie so I baked 1 cookie just for me. And another one for J as I was feeling generous :)
Its a one bowl recipe with minimal preparation or washing up. If you bake regularly then you will have all of these ingredients to hand. The cookie was really good especially when warm and served with ice cream. It tastes like a soft, chewy chocolate chip cookie with a slight cake like consistency. I tried 2 different methods of making this cookie. The first was to melt the butter and then whisk in the sugar and other ingredients into a smooth paste. The second was to use softened butter and a fork to add in the other ingredients and surprisingly the second method worked better. The first method produced a cookie that was more like a cake with a smooth texture whereas the second method gave it more of a rough, cookie texture.
Makes 1 cookie
15g butter
1 tablespoon caster sugar
1 tablespoon brown sugar
30g plain flour
1 egg
1 teaspoon vanilla extract
25g chocolate chips
- Place the softened butter and sugars in a bowl and mix roughly with a fork.
- Add in the egg and vanilla extract and stir.
- Add in the flour and stir.
- Add in the chocolate chips and stir.
- Place the bowl in a microwave and cook on high for 40 seconds and check. Mine took 50 seconds to cook but as microwaves vary, I suggest checking from 40 seconds and adding on 10 second increments until the cookie is cooked.
