A Dessert Dip and a Special Cookie GIVEAWAY



Yahoo!!! - another giveaway!  And what a perfect giveaway for the last week of the 12 Weeks of Christmas Cookies because it involves COOKIES!!!  A couple of weeks ago I was sent a lovely box full of treats from Tates Bake Shop located in the Hamptons, NY.  THREE boxes of cookies and a fabulous cookbook from Tates was included in that box....everything that you will receive if you WIN!  Yes, a package of 3 boxes of scrumptious kinds of cookies  (Oatmeal Raisin, White Chocolate Chip Macadamia Nut and  Chocolate Chip) AND a cookbook from Tates Bake Shop in The Hamptons, NY  goes to the lucky winner of this giveaway.


The cookies were delicious!  The White Chocolate chip Macadamia and Chocolate Chip cookies are tender and sweet with a lovely crispness while the Oatmeal Raisin cookies just melted in my mouth with a softness that can not be resisted.


  And the cookbook is fabulous!  I can not wait to dive into the ear-tagged pages of recipes.  I want to make the White Chocolate Brownies, Raspberry Squares, Hermits, Double Peanut Chocolate Brownies and Toffee Pecan Cookies.....to name a few. ;-) Keep your eyes open for some of these recipes coming your way on my blog in the future.

Now onto my last recipe for the 12 Weeks of Christmas Cookies 2010....

Goodness it is the LAST week of the 12 Weeks of Christmas Cookies!  How in the world did that happen so quickly?  Wowsers....time flies!  I have had so much fun with this baking group.  I have made many, many new friends, gained access to tons of fabulous blogs and recipes and I seriously can  not wait until next year to participate again!  Many, many thanks to April of Abby Sweets for organizing such a great baking group!



In honor of the last week of this fabulous baking group I would like to share with you a simple and oh-so-dlish dessert dip called, Chocolate Chip Cookie Dough Dip.  I had seen this recipe floating around blog land recently and decided to try my hand at it when I came upon it at one of my very favorite food blogs, Brown Eyed Baker.

Brace yourself for this treat now.  It is super, super easy to whip together and will be a HUGE hit to everyone that dips into it.  They will be begging you for the recipe...yes, begging you. 

Chocolate Chip Cookie Dough Dip
(recipe from the very talented, Brown Eyed Baker)




Ingredients:

1 stick butter (I used unsalted)

1/3 cup brown sugar

1 tsp vanilla extract

1 (80z.) package of cream cheese

1/2 cup powdered sugar

3/4 cup mini chocolate chips

Directions:

1. In a small saucepan over medium heat melt butter with brown sugar.  Stir constantly until the brown sugar has dissolved.   Remove from heat and then whisk in vanilla extract.  Set saucepan aside and cool.

2. Beat together cream cheese and powdered sugar while butter/brown sugar mixture is cooling. 

3. Slowly beat in cooled butter/brown sugar mixture into the cream cheese mixture.  Beat for a full minute on medium speed then with a wooden spoon or plastic spatula gently stir in mini chocolate chips.

4. Pour dip into a serving bowl and refrigerate.  Garnish with more mini chips before serving if you wish.  Serve dip with cookies of your choice - graham cracker sticks or vanilla wafers go great with this dip!

I'm the kind of person who likes to reread books and rewatch movies and TV shows. I don't really know why. I think I'm just wired this way — not knowing what's going to happen stresses me out, and instead of just enjoying the journey I become too focused on getting to the point where I know it all. I've spent too many nights binge-watching and flipping frantically through the pages of a book just to figure out what happens next.


But there's also a certain to revisiting a movie, TV show, or book throughout the years, and seeing how your perspective on it has changed. I recently plowed through the entire collection of The Sisterhood of the Traveling Pants and found myself rolling my eyes at the characters I liked best when I was younger, instead sympathizing with the ones I initially waved off. Ditto with Gilmore Girls (though boy, am I excited for that revival!). And The Graduate, for that matter (because here's to you, Mrs. Robinson — you deserve better than Benjamin).

I'm not sure if you can say the same about recipes, however. The best recipes tend to stay timeless through and through. Ina Garten's chocolate cake recipe will always be delicious, as will Jacques Torres' chocolate chip cookie recipe. The best I can do are homemade versions of childhood classics like funfetti cake and this giant chocolate chip cookie:


Because do you guys remember those giant chocolate chip cookie cakes you could get at the supermarket? The ones that were basically a single chocolate chip cookie about the size of the pizza, and usually had a neon-colored frosting job. I loved those as a kid. This recipe is sort of like that, but better because it's minus all the unnecessary sugar and artificial ingredients they usually threw in there to make those cookie cakes shelf-stable.

This recipe comes from Cook It In Cast Iron, a new cookbook in the America's Test Kitchen family that focuses on recipes you make in a cast iron skillet. It's basically your classic chocolate chip cookie, but with brown butter and extra crispy edges from being baked in the skillet. If you're an "edge" person, this cookie's for you — even the chewy center pieces have perfectly crisp bottoms! It's all absolutely delicious. All that's missing is neon pink frosting, really.

Some baker's notes:
  • America's Test Kitchen specifically designed this recipe for a cast-iron skillet by increasing the baking time and cutting back the butter and chocolate chips quantities to ensure that the cookie baked through the middle. I don't think the recipe will work if you want plain ol' regular chocolate chip cookies — if you're looking for those, I suggest checking out this recipe for slice-and-bake cookies, or my favorite one from the New York Times!

  • The original recipe uses a 12-inch skillet, but I baked mine in a 10-inch one and it worked fine (though it's a little thicker than what the original recipe has you make). You might also need to increase the baking time by 5 to 10 minutes if using a 10-inch skillet.

2 minute chocolate chip cookie



Earlier this week, I had a real craving for cookies. It was late at night and I didnt want to bake a whole batch so I decided to try out one of the cookies in a mug recipe. Ive made 5 minute mug cakes in the microwave before and although not as good as a proper baked cake, they are great for when you really, really need cake. Well I really needed a cookie so I baked 1 cookie just for me. And another one for J as I was feeling generous :) 

Its a one bowl recipe with minimal preparation or washing up. If you bake regularly then you will have all of these ingredients to hand. The cookie was really good especially when warm and served with ice cream. It tastes like a soft, chewy chocolate chip cookie with a slight cake like consistency. I tried 2 different methods of making this cookie. The first was to melt the butter and then whisk in the sugar and other ingredients into a smooth paste. The second was to use softened butter and a fork to add in the other ingredients and surprisingly the second method worked better. The first method produced a cookie that was more like a cake with a smooth texture whereas the second method gave it more of a rough, cookie texture.

Makes 1 cookie

15g butter
1 tablespoon caster sugar
1 tablespoon brown sugar
30g plain flour
1 egg
1 teaspoon vanilla extract
25g chocolate chips

  • Place the softened butter and sugars in a bowl and mix roughly with a fork. 
  • Add in the egg and vanilla extract and stir.
  • Add in the flour and stir.
  • Add in the chocolate chips and stir.
  • Place the bowl in a microwave and cook on high for 40 seconds and check. Mine took 50 seconds to cook but as microwaves vary, I suggest checking from 40 seconds and adding on 10 second increments until the cookie is cooked.

A Fall cookie recipe and a COOKIE GIVEAWAY!




Did you know that the month of October is National Cookie Month?! How fun and yummy! In honor of such a special month I want to share with you a lovely Fall flavored cookie recipe along with a fabulous cookie giveaway from Tates Bake Shop.


Last December I had the opportunity of receiving a variety of cookies from Tates along with their wonderful cookbook - as seen here. When I was contacted once again to review one of their newest kind of cookies -Whole Wheat Dark Chocolate Chip - I jumped for joy!  Dark Chocolate is one my all time favorite kinds of chocolate. Honestly, I like any kind of chocolate but dark chocolate is pretty special.


  Let me tell you when I took my first bite of one of these cookies my eyes feel back into my head with happiness.  SO good!  The cookies are chewy yet crisp - the best of both worlds.  And the taste is perfect - not too sweet with plenty of dark chocolate chips throughout the
cookie.

Now I get to share with you the fun Fall cookie recipe I recently made.  This cookie recipe would be a great treat for kids, especially for an after school snack as these cookies are super easy to make and bake in a jiffy!


Apple Cinnamon Chip Cookies
(recipe slightly adapted from So Domesticated)
 Ingredients:
2 Granny Smith apples (or any kind of baking apple), peeled and chopped
1 tsp lemon juice - keeps the chopped apples from browning
3 cups Bisquick
1/2 cup brown sugar
1/2 cup sugar
1 1/2 tsp ground cinnamon
1/2 cup half and half (I used 2% milk instead with success)
1 egg
1 cup cinnamon chips (I added this to the original recipe)

Directions:

1. Preheat oven to 350 degrees F. Line cookie sheets with parchment paper or lightly spray with non-stick baking oil.

2. Peel and chop apples into small pieces.  Place apples in a bowl and toss with lemon juice. Set aside.

3. In a large bowl mix together Bisquick, both sugars and ground cinnamon.  Set aside.

4.Whisk together half and half (or milk) and egg.  Pour into Bisquick mixture and stir to combine.

5. Add in chopped apples and cinnamon chips. Stir to combine.

6. With a medium ice cream scoop, drop dollops of cookie batter onto prepared cookie sheets.  Bake for 12-15 minutes or until edges are lightly browned.  Makes a good 2 dozen cookies.  Store cookies covered in a tightly sealed container.
