A Goodbye Pie A Raspberry Cream Pie at that!

A Goodbye Pie A Raspberry Cream Pie at that!

I hate, HATE, hate goodbyes.  There is nothing fun about them. AT ALL.  I prefer hellos over goodbyes....dont you?

A couple of weeks ago I had to say goodbye to not one, not two, not three but FOUR people that I adore - my parents, my sister and her sweetie pie.? Before I said "goodbye" I invited all of them over for some dinner and dessert.  I figured I would be better off doing the deed of saying goodbye on a full tummy.  I made a chicken casserole for dinner and then to finish off the meal I served pie.  A fabulously EASY and super YUMMY pie.  Yes, I made PWs Raspberry Cream Pie

It was over the top DLISH!  Simple ingredients along with a speedy assembly make this pie a lovely dessert. You can easily make this pie even faster than PW by using a pre-made crust or you can go right ahead and follow her recipe to the "T" and make your own cookie crust.

Want the recipe? Of course you do! :-)

Raspberry Cream Pie
(recipe from The Pioneer Woman, Ree Drummond at the Tasty Kitchen)

Ingredients:

25 whole Oreo cookies

4 Tbsp butter, melted

1 generous cup fresh raspberries

3 Tbsp sugar

2 containers (6oz. each) raspberry yogurt

1 package (3.4 oz.) instant vanilla pudding mix

1 cup heavy cream or whipping cream

extra raspberries for garnishing

Directions:

1. Make crust....(or purchase a pre-made Oreo crust)....preheat oven to 350 degrees F.  Place cookies in a food processor and "crush" or place cookies in a Ziploc bag and smash with a rolling pin.  Stir in melted butter until well combined.  Pour crushed cookie mixture into a regular pie pan and press down all over the pan and up the sides.  Bake for 3-4 minutes - just long enough to set.  Cool crust completely after baking to set.

2. Make pie filling....pour fresh raspberries into a medium size bowl.  Smash them with a fork, then sprinkle with 3 Tbsp of sugar.  Stir smashed raspberries and sugar together and then let sit for 15 minutes.

3. In a bowl of a mixer combine raspberry yogurt with the instant vanilla pudding powder.   Beat on low for 1 minute.  Pour in heavy cream and whip on low for 30 seconds. Stop the mixer and scrape down the bowl with a rubber spatula.  Turn mixer on medium-high speed and beat for 2 minutes, or until mixture is thick.

4. Turn off mixer, then fold in fresh raspberries until just combined.  Pour this lovely creamy raspberry mixture into COOLED pie pan and spread evenly.

5. Place pie in freezer and freeze for 2 hours, or until very firm.  Cut into slices and garnish with fresh raspberries if you wish.  ENJOY!.....I know you will. :-)

3 Ingredient ELVIS Soft Serve Ice Cream

3 Ingredient ELVIS Soft Serve Ice Cream

Elvis was a pretty special guy.  He could swing and shake his hips like no one else out there.  He had a very distinctive way to talk and of course his singing was pretty darn cool too.  He even had a love for the combo of PB and banana.  My kind of guy! Im pretty keen on the taste of these two flavors together.  I recently discovered that Nora from Natural Noshings is also quite happy with such a combo of ingredients. Yup, Nora shares a fabulous recipe (with ONLY 3 ingredients in it!) for a soft serve ice cream just like ELVIS wouldve liked.  Simple. Decadent with peanut butter and banana.  And so easy to make.

Natural Noshings has been my most recent assignment from the Secret Recipe Club which I participate in each month.  Once again my happiness to be "introduced" to a new food blogger was above and beyond with delight.  Nora is a completely adorable young lady who has a passion in life for delicious and wholesome food along with being physically active.  Shes a gem.

As I browsed and explored through Natural Noshings I started to mark recipes that caught my eye.  My list began with her Cherry Walnut Oat Muffins (anything CHERRY stops me in my tracks) and then I found myself considering to make her recipe for Mediterranean Scramble with Goat Cheese (egg dishes are just the best....especially when Im watching my carbs). But as soon as I came across the recipe for 3-Ingredient ELVIS Soft Serve Ice Cream I knew I had found my pick.  I had just bought a beautiful jar of natural peanut butter from Trader Joes and I had a whole bag full of frozen bananas that were calling for some recipe action.  The third ingredient that was called for in the recipe is actually an optional one as you can choose what youd like as a topping.  Nora went with crumbled bacon pieces sprinkled on top of her frozen delight.  I went with chocolate chips.  Chopped peanuts, a drizzling of honey, a dash of ground cinnamon or even just pain old yummy chocolate sauce are just a few more ideas of what could be used as the 3rd component to this sweet.

A food processor is the machine of choice to whip up this frozen treat.  I used my nutri-bullet and after struggling a bit to get to the finished project I decided that next time I make this recipe I will indeed use the food processor as it would probably be faster and more efficient.

This recipe makes enough for 2 medium size servings or 1 large serving.  I ate half of my dish and saved the rest for later covered in the freezer as it was quite filling.

I thank you, Dear Nora for sharing this recipe in blog land so that I too can pass it onto many others to enjoy!
